Ruby Beauts Fingerling Sweet Potatoes with Dates

Serving Size:Serves 6

Ingredients

  • 2 lbs Ruby Beauts Fingerling Sweet Potatoes, thoroughly washed, unpeeled, cut into 1-inch chunks
  • 2 teaspoons Brennan's Cellars Extra Virgin Olive Oil
  • 2 Tablespoons butter
  • 1/3 cup Brown sugar
  • 1/3 cup Brennan's Apple Cider
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup pitted, chopped oasis dates

Description

Created by Northport’s own, Chef Rachel, this dish is the perfect way to spice up sweet potatoes! Don’t wait for Thanksgiving make this recipe. Serve with pork, chicken and, of course, turkey!

Preparation

Preheat oven to 350 degrees F.

Toss sweet potatoes with olive oil and roast in preheated oven until tender.

In a sauté pan, melt butter over medium heat. Add brown sugar, apple cider, cinnamon, nutmeg and dates. Simmer until the dates are softened. Toss the sweet potatoes into the pan to coat evenly. Remove from heat and serve!
