Swiss and Bacon Artichoke Onion Dip

Serving Size:Serves 8

Ingredients

  • 2 Tablespoons butter
  • 4 cups onions, coarsely chopped
  • 1 large clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 4 cups Medium Aged Swiss cheese, shredded
  • 8 oz Brennan's Full-Cream cream cheese, softened
  • 1/2 cup milk
  • 2 cups canned artichoke hearts (not pickled), drained and coarsely chopped
  • 5 slices thick cut bacon, cooked and crumbled

Bacon and cheese dip? Yup! Yummm.

Preparation

Preheat oven to 375 degrees F. 

In a large skillet, add butter and melt over medium heat. Add onions and garlic, sprinkle in salt and pepper. Stir occasionally and cook until onions are caramelized. 

In a large bowl, combine Swiss cheese, Cream Cheese and milk. Stir in onion and garlic mixture, artichoke hearts, and half of the cooked bacon. Pour into a greased baking dish. Sprinkle with remaining bacon. Bake for 30 minutes, or until cheese is melted and bubbly. 

Serve warm with tortilla chips or crackers.
