On a wine buying trip to Tasmania, Skip had one of the most delicate and fresh tasting salad dressings he'd ever tried. The restaurant manager was kind enough to give him the name of the maker, Mike Kelly. Skip instantly hit it off with his fellow Irishman and a partnership was born.

Skip choose a Tasmanian Tiger for the Wild Isle label. The Thylacine (Tasmanian Tiger) looked like a large, long dog, with stripes, a heavy stiff tail and a big head and is the only mammal to have become extinct since Europeans began settling Tasmania. However, there have been many sightings over the years giving hope that the species is not gone.

Traditional Style Dressing

Fabulous over a crisp fresh salad! It is also EGGcellent with scrambled eggs or mixed with mayonnaise for egg salad. Use as a topper for baked potatoes.

Basil Garlic Dressing

Liven up your Italian salad or toss with cooked pasta, olives, tomatoes, feta cheese and red onions for delicious pasta salad. Or… use to dress your Italian sub.

Pepperberry Dressing

Indigenous to Tasmania, the pepperberry is a small black berry with aromatic flesh that imparts a wonderful spice to sauces. Excellent with red meat or chicken. Try tossing with fresh ravioli and top with shaved parmesan.

Caesar Dressing

Who doesn’t love a Caesar salad? If adding chicken or shrimp, marinate it first in Wild Isle Caesar and toss it on the barbie. Viola… a meal!

Sweet and Hot Chili Dressing
