On a wine buying trip to Tasmania, Skip had one of
the most delicate and fresh tasting salad dressings he'd ever tried.
The restaurant manager was kind enough to give him the name of the
maker, Mike Kelly. Skip instantly hit it off with his fellow Irishman
and a partnership was born.

The Thylacine (Tasmanian Tiger) looked like a large, long dog, with
stripes, a heavy stiff tail and a big head and is the only mammal
to have become extinct since Europeans began settling Tasmania.
However, there have been many sightings over the years giving hope
that the species is not gone.
