Lemon Curd Tart with Fresh Blueberries

Cottage Industries Lemon Curd is so good. There is no reason to make your own for this colorful citrusy tart

Ingredients:
    Crust: 1 Brennans Shortbread Tart Shell

    Curd: Brennans Lemon Meringue or 1 jar Cottage Industries Lemon Curd

    Topping:
    Pint fresh blueberries, rinsed
    1 cup sweetened whipped cream, optional


Preparation:

Spoon lemon curd into tart shell, smoothing the top with the back of a spoon spatula. Arrange the top in a decorative pattern over the top and serve with whipped cream on the side, if desired.
