Easy Fruit Tart

Using our ready-to-go Shortbread Cookie Tart Shell, this tart is easy and beautiful. So simple and elegant looking, you will make it all the time. You can mix things up by swapping out different seasonal fruit.

Ingredients:
    Crust: 1 Brennans Shortbread Tart Shell

    Glaze:
    ½ cup Brennans Apricot Spreadable Fruit or Preserves, other flavor work
    1 tablespoon water


    Filling:
    8 oz cream cheese or mascarpone, softened
    ½ cup granulated sugar
    1 teaspoon vanilla

    Topping:
    3 cups Brennans Fresh fruit: like strawberries, kiwi, blueberries, raspberry, pineapple, peaches, nectarines, etc


Preparation:

Heat preserves and water in small sauce pan over medium heat until the liquid is melted. (You can also melt in the microwave.)

With a pastry brush, spread a thin layer over the bottom and sides of the crust to keep the crust from getting soggy. Let the crust sit for 20 minutes.

Combine filling ingredients and mix with blender until smooth. Spread onto crust.

Top with fresh fruit. With a pastry brush, spread a thin layer on top of the fruit.
