Lemon Mousse

This light and simple dessert is easy to make and refreshing to eat. You can serve this in one large bowl or in individual serving dishes.

Ingredients:
    1 jar My Cottage Industry Lemon Curd
    1 cup heavy cream, whipped to soft peaks
    Zest of one lemon

    Fresh raspberries or strawberries for garnish. (optional)

    Shortbread Cookie (optional)


Preparation:

Empty the jar of lemon curd into a large mixing bowl and whisk until smooth.

Add the whipped cream and lemon zest and gently fold.

Gently spoon into serving bowl (s).

Garnish, if desired
