Spinach Pomegranate Salad with Apples and Walnuts

This colorful salad is a tasty fall /winter side dish.

Ingredients:
    4 cups baby spinach leaves
    1 apple, cored and chopped
    1/3 cup pomegranate seeds
    1/3 cup walnuts, chopped and toasted
    4 slices of bacon, cooked and crumbled
    2 ounces, blue cheese, crumbled
    Pomegranate Vinaigrette
    ½ cup pomegranate juice, like Smart Juice
    1 tablespoon Brennan's Balsamic Vinegar
    1 teaspoon Dijon mustard
    1 teaspoon honey
    ½ cup vegetable oil
    Salt and freshly ground black pepper, to taste


Preparation:

Put first six ingredients in a large bowl.

Make dressing. In a medium bowl, whisk together pomegranate juice, vinegar, mustard and honey. Slowly drizzle in oil, whiskey constantly, until its all incorporate. Season to taste with salt and pepper. Yields: 1 ¼ cups.

Toss salad with 1/3 cup of dressing and reserve the rest for later.
